Gotta Be Penelopes Sweet & Spicy Wings

With a little bit of heat and a little bit of sweet, Gotta Be Penelopes Sweet & Spicy Wings are quick and easy to prepare and are sure to be a crowd pleaser while watching the big game or anytime!

Ingredients:

  • 10 oz Gotta Be Penelopes Hot Pepper Jelly (substitute mild, extra hot or pineapple)

  • 12 oz Barbeque Sauce (Sweet Baby Rays Sweet & Spicy)

  • 2 - 4 lbs of chicken wings (fresh or frozen)

The Secret Sauce


Pour BBQ Sauce and Gotta Be Penelopes Hot Pepper Jelly in a bowl and mix well with

a fork or whisk. Pour half of the sauce into a separate bowl to be used later. Pour remaining sauce into a gallon size ziplock bag along with the wings. Depending on how many wings you have, this may need to be done in two separate bags. Seal the bag and mix the wings around so that they are coated evenly.


Cooking Instructions:

Instant Pot*

Pour one cup of water or chicken broth into the instant pot. Place the trivet or steam basket inside the pressure cooker. Place the coated wings on the trivet inside the steamer basket. Close the lid and seal the valve. Cook on high pressure for 15 minutes (if frozen) or 10 minutes (if fresh) then let the steam naturally release for 5 minutes. Open the valve to let the remaining steam out. Carefully remove the wings from the cooker and spread evenly on a foil-lined, rimmed cookie sheet. Brush half of the remaining sauce over the wings and broil for 3 minutes. Remove the wings again, flip and brush the remaining sauce on the other side and broil for 3 – 5 more minutes or until crispy. If there is any remaining sauce, you can brush on again. Serve and enjoy! *As per your instant pot instructions, please use extreme caution when using any pressure cooker, as the steam can burn you.

Oven

Preheat oven to 375 degrees.

Spread the coated wings evenly onto a foil lined, rimmed cookie sheet. Bake at 375 for 30-40 minutes (if frozen) or 25-30 minutes (if thawed). Remove the wings and brush half of the remaining sauce on top of the wings and broil for 3 minutes. Remove the wings again, flip and brush the remaining sauce on the other side and broil for 3 more minutes or until crispy. Serve and enjoy!

Grilling

Preheat grill to medium heat (325 - 375 degrees). Spread coated wings evenly and cook for 20-30 minutes (if frozen) or 15-20 minutes (if thawed). Turn the wings regularly and brush with more sauce each time. Serve and enjoy!
