Bacon Wrapped Scallops

Ingredients:


  • 10 large sea scallops

  • 10 slices of center cut bacon

  • Salt & pepper, Lemon juice

  • Mild or Hot Habanero Pepper Jelly


Preheat oven to 325

Rinse scallops in cold water and pour

lemon juice over them. Let drain while

cutting the bacon slices in half. Pat the scallops dry and cut in half. Wrap bacon slices around the scallops (stretch the bacon if necessary). Place the scallops on a broiler pan and sprinkle a little salt & pepper on top of each scallop. Bake on the center rack for approximately 30 minutes (bacon should be crispy around the scallops). Remove from oven and put Mild or Hot Habanero Pepper Jelly on top of each scallop. Put them back in the oven for about 5-10 minutes to bake the jelly on top. Serve with more jelly as a dipping sauce if desired.

Optional: Put a few drops of liquid smoke on top of the scallops before baking to get a smoky flavor.
