Ingredients:
2 cups mixed salad greens
Thinly sliced red onion
2 washed and sliced fresh strawberries
Vinaigrette (recipe below)
Crumbled goat cheese
Mild or Hot Habanero Jelly
Sliced almonds or walnut pieces
Vinaigrette recipe:
Mix ¼ cup white wine vinegar with ½ cup canola oil & ¼ tsp salt and 1/8 tsp pepper. You can use olive, canola, vegetable or grapeseed oil. You can also choose which vinegar such as red or white wine. Another light
one is Rice Vinegar.
Place mixed greens in a bowl and toss gently with the vinaigrette. Place on a plate and add onion and strawberries. Add the crumbled goat cheese on top and drizzle the Mild or Hot Habanero Jelly on top of the goat cheese. Toss some sliced glazed almonds or walnuts on top and Enjoy!!
Optional:
Add sliced grilled chicken. I just coat a boneless chicken breast with olive oil and add salt & pepper. Grill on medium high to get it crispy on the outside. The chicken would go on the greens first and then the other toppings would follow. Another option is to add crumbled bacon. Serves 2.
